Every address keeps its own server. The outgoing mail server is always tied to the address you pick, so invoices never leave through the wrong server.
Apply your email_from rules automatically. When nothing is picked manually, the wizard resolves the matching metadata rule for the invoice.
Your outgoing mail server must support this. Odoo Email From only manages which address is offered; your provider still has to allow sending under each address you configure.
